Fandangled Salad

Another hit from my cousins, Robert and Emmie! This salad is the perfect combination of sweet and tangy. It’s also easy to put together.

spring mix lettuce
yellow bell pepper, optional
toasted pecan pieces
feta cheese
seasonal fruit (strawberries, grapes, kiwi, pineapple, mandarin oranges or fruit of your choice)

Dressing:

¼ c. balsamic vinegar                             1 c. light olive oil
¼ c. sugar                                                ¼ c. honey
½ small onion                                         ¼ t. salt
1 t. dry mustard                                      1 t. Spanish paprika
1 t. poppy seeds                                       1 t. celery seed

Put dressing ingredients in a blender and liquefy.  You may double this recipe if desired.  Dressing needs to be refrigerated.  Let the dressing get to room temperature and stir before serving.

Put the spring mix in a bowl, sprinkle peppers, pecans, fruit and feta cheese.  Drizzle the dressing over the salad or serve it on the side.

This salad can be your own creation; it is very good with all different kinds of fruit.  It is very pretty if you serve it in a tall container and layer the salad.
