Cream cheese mixture:
Mix together 8 oz softened cream cheese, 1/3 cup of sugar and beat til creamy then add 1 egg and beat mixture. Fold in 6 oz of chocolate chips. {This is the surprise!}Spoon cake mixture into muffin tins filling them ½ full then place a dollup of cream cheese mixture in center of each cupcake.
Bake at 350 degrees til done
Chocolate cream cheese frosting:
1 stick butter (softened)
1 8 oz cream cheese (softened)
1 pound confectioners sugar
½ cup cocoa + ½ tsp vanilla
Enough cream to make creamy
(You can eliminate the cocoa if you would like a cream cheese frosting. That’s what I did here and I added a little food coloring.)
