Acre Peas and Okra

1&1/2 lbs Shelled Acre Peas, washed and drained

1 TBSP McCormick Chicken Base ( which has no MSG and is delicious)

1 lb. Okra (washed and trimmed)

Dash of salt (to taste)

Mama says that my great-grandmother always seasoned her peas with white bacon or some call it a “streak of lean”. But it adds fat to the already delicious peas.  So, if you want to be healthy or, if you’re like me and would rather eat your calories in dessert, then you can skip the bacon! (wink-wink!)

 

Add enough water in pot to cover peas approx. 1 inch above peas. Bring to a full boil and let simmer approx. 45 min.

 

Place washed and trimmed Okra over peas in the last few minutes of cooking – the flavor of the peas and chicken base make Okra delicious! Don’t leave Okra in for more than 7 minutes maximum or it will be too stringy.

{A word about Acre Peas: officially called a white acre pea, they are a delicate little legume. They are related to the black eyed pea but are smaller and softer in texture. They are my most favorite side dish and if you can find them north of the Florida state line would you please email me! Thanks!}
